Moist Carrot Cake

My friend Aliyah has recently discovered Carrot Cake and has fallen in love with it. I identify with her on so many levels, one of which is the fact that I didn’t always like carrot cake growing up, I always thought it was our parents trying to trick us into eating more vegetables, and that they might as well have tried a broccoli or cauliflower cake.
